The production of extra virgin olive oil Terre senz’acqua comes from olive groves cultivated by the inhabitants of the towns of Aliminusa and nearby Montemaggiore Belsito. A cultivation based on dedication and absolute respect for health, safety and environmental regulations, without use of fungicides. The most common and distinguishing olive cultivars of this territory are Biancolilla and Ogliarola Messinese. The olive harvest is at the beginning of veraison, in October and November; all the olives are hand-picked. A very costly operation that has, however, the advantage of keeping the fruit intact and a prerequisite for obtaining an olive oil with excellent organoleptic qualities. The olives are conferred to the mill and pressed within 12 hours from harvesting. The oil extraction is carried out with particular attention, as it is the most delicate phase for the safeguarding of the antioxidants (polyphenols and phenols) present in olive oil, which are essential substances for product preservation and stability.
